Hello friends, if you are a lover of bakery foods, do try this recipe of instant fluffy vanilla cupcakes. I found it very easy and time saving. Go ahead and try these for your snacks preference.
3/4 Cup Condensed Milk
3/4 Cup Butter (I used salted butter)
1 Tsp Vanilla Essence
1 1/2 cup All purpose flour/Maida (Use till you get required consistency)
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/3 Cup Soda (I used Kinley’s Soda)
1/4 Tsp Salt (Optional)
Whisk butter and condensed milk in a large bowl with hand blender. Add vanilla essence and mix for 3 minutes till all ingredients are one. Add all purpose flour, baking powder and baking soda. Mix again till you get a smooth batter. It will be slightly thick than what we make for dosa batter. Add salt if you opt to use and mix again. Use the fold method.
Pre heat microwave oven for 180 degree celcius. Add soda to the batter and mix well. Line up the butter paper moulds of cupcakes with ghee or butter. Put them in the mould tray. Pour the batter into the paper moulds and bake them at 170 degree celcius for 25 minutes.
Check with toothpick or skewer to see it it comes out clean. Remove the mould tray and let it cool for 5 minutes. The cupcakes will come out fluffy and yummy. Enjoy with your family for snack time. 🧁🧁🧁
